SHRIMP KABOBS

Microwave Time: 9 Minutes

SHRIMP KABOBS INGREDIENTS
18large shrimps, peeled
1/2cup soy sauce
1 tablespoon vinegar or lemon juice
1 teaspoon sugar
1/4teaspoon ground ginger
1can 8-oz (232g) pineapple chunks, drained
1can 8-oz (232g) whole water chestnuts, drained, cut into chunks like pineapple
1large green pepper, chunks
1tablespoon sesame seed
1fresh lime
DIRECTIONSĄG

  1. Cut water chestnuts in half, wash green pepper, remove tops, seeds and membranes and cut in 18 pieces.
  2. Combine soy sauce, vinegar, sugar and ginger in medium bowl and mix well. Add shrimp and water chestnuts to marinate. Refrigerate 1 hour.
  3. Thread wooden skewers with 1 shrimp, 1 pineapple chunk, 1 green pepper and 1 water chestnut. Sprinkle with sesame seed.
  4. Place shrimp kabobs on dish. Cook microwave power (10) 3 minutes. (6 skewers at one time only.)
  5. Squeeze a few drops lime juice on kabob just before serving.


SPANISH RICE CREOLE
Servings: 6

Microwave Time: 8 Minutes

SPANISH RICE CREOLE INGREDIENTS
6bowls cooked rice
12prawns, head and shells removed
2,4oz(70g) chicken in small pieces
2red peppers, finely chopped
3tablespoons oil or bacon grease
1/2green pepper, chopped
1 teaspoon red cayenne pepper
1teaspoon chilli powder
1/2teaspoon salt
1/2cup tomato sauce
6drops tobasco sauce
1cup chopped onion
1/4cup water or white wine
DIRECTIONSĄG

  1. Stir into rice: tomato sauce, onion, cayenne pepper, chilli powder and salt. Place rice into serving dish. Place prawns vertically around edge. Sprinkle chopped red peppers over top of rice. Arrange green pepper pieces on top. Add tobasco sauce to 1/4 cup water or white wine and sprinkle on top. Cover and cook microwave (10) 8 minutes.


TROUT WITH SLICED ALMONDS
Servings: 1
Power Level: (10)
Microwave Time: 10 Minutes

TROUT WITH SLICED ALMONDS INGREDIENTS
1-lb(454g) trout, cleaned
3tablespoons white wine
1cup onion, chopped finely
5oz(145g) mushrooms, sliced
1/3cup boiling water
2tablespoons parsley, chopped
11/2teaspoons salt
1/4teaspoon pepper
4tablespoons butter, melted
3tablespoons sliced almonds
DIRECTIONSĄG

  1. Marinate trout in wine for 5 minutes.
  2. Mix onion, mushrooms, boiling water, parsley, salt, pepper, butter and almonds. Place half inside trout and place half on top trout. Cook microwave power (10) 10 minutes.


STUFFED TOMATO
Servings: 6
Power Level: (10)
Microwave Time: 6 Minutes

STUFFED TOMATO INGREDIENTS
6firm ripe tomatoes, medium size
1/4cup melted butter
1cup minced celery
2cups crushed pineapple, well drained
2cups cooked rice
1/4teaspoon salt
1/4teaspoon white pepper
1/2teaspoon ground ginger
2dashes tobasco sauce
parsley springs to garnish
DIRECTIONSĄG

  1. Wash tomatoes, cut off tops, remove all but the meat near the skin. Turn upside down to drain.
  2. Combine rice, butter and tobasco in a bowl. Mix well. Add celery, pineapple and ginger. Mix well and stuff this mixture into the tomato shells. Place on a round dish, upright and cook uncovered microwave power (10) for 6 minutes. Garnish with parsley before serving.


PINEAPPLE FRIED RICE
Serving: 2
Power Level: (10)
Microwave Time: 5 minutes

PINEAPPLE FRIED RICE INGREDIENTS
11/2cups cooked rice
1cup cooked fresh baby lima beans
1oz(29g) ham, cut into cubes
1pineapple (see below)
4tablespoons ketchup
1/4teaspoon sugar and salt
1/8teaspoon pepper


DIRECTIONSĄG

  1. Wash pineapple. Cut the top off to make a cover (see Note).
    Remove fruit from inside and cut into cubes. Leave outside shell for serving the dish.
  2. Mix pineapple cubes, rice, beans, ham cubes, ketchup, sugar, salt and pepper, and then fill pineapple shell.
  3. Put the filled pineapple standing upright in microwave oven uncovered and cook microwave power (10) for 5 minutes.
  4. Cover the pineapple with the reserved top and serve.
Note: If the pineapple does not stand-up well, cut the top off higher up, cut the pineapple in half lengthwise and use the two halves horizontally, to fill and serve.


GINGER CHICKEN
Serving: 6
Power Level: (10)
Microwave Time: 20 minutes

GINGER CHICKEN INGREDIENTS
21/2lbs (1134g) chicken drumsticks and thighs
1/3cup honey
1/3cup chili sauce
3tablespoon soy sauce
2teaspoons ground ginger
1/2teaspoon salt
1/4teaspoon pepper
1tablespoon cornstarch
2tablespoons cold water

DIRECTIONSĄG

  1. Place chicken on baking dish. Mix above ingredients except cornstarch and cold water. Brush over chicken. Pour remainder over chicken pieces. Cook for 16 minutes on power (10).
  2. Remove chicken to platter. Cover to keep warm. Skim fat from sauce. Mix cornstarch and water; stir into sauce then move into microwave oven and cook for 4 minutes on power (10) to thicken. Brush chicken pieces. Pour remainder if any, over chicken pieces.
